Capsaicin has general impressive health benefits such as anticancer, stimulates digestion and enables weight loss. The aim of this study is to extract capsaicin from black pepper white by using polar (Ethanol) nonpolar (Acetone) solvents maximize the percentage yield capsaicin. effect temperature solid solvent ratioon investigated for extraction pepper. higher acetone than ethanol both at ratio 50oC 1:10, respectively. Also, percentageyield 70oC Hence, could be potential substrates
